
Watermelon salad is the perfect way to say goodbye to summer one bite at a time.
I'm naturally inclined to eat seasonally. Watermelon in December never sounds that appealing to me. And asparagus outside of spring just isn't as satisfying. I'm a firm believer of enjoying these foods at the peak of their season, often eating them so much that I'm a little sick of them by the time their season is over with. But that seems to work out for me because once they're back in season I crave them again.
As the summer days dwindle away I find myself shifting my food choices towards fall. I've started looking at apple and pork recipes and cinnamon flavored everything.

The last of the summer get together's are happening before everyone gets busy with school, or work, and the cold rainy weather drives us indoors. This is time to really enjoy that last few weeks of summer's bounty and freedom.
Just like summer this salad doesn't last long.
This watermelon salad is a bit of a mash up of summer and fall with the juicy sweetness of the watermelon and the toasty earthiness of the pumpkin seeds. The mint and feta cheese give it a pop and round out the flavors. It's perfect for transition of summer to fall and is super easy to make.
This salad is best when fresh so don't make it too far in advance. If you let it sit too long the pumpkin seeds will become soggy. It should also be kept chilled until served. If you're making it for a bbq you have to travel too I suggest prepping all the ingredients beforehand and tossing them together just before serving at the party. That way most of the work is done and you're salad wont become soggy during the travel time.

Ingredients
- 2 oz Feta Cheese (Crumbled)
- ½ cup Pumpkin Seeds
- 6 cups Watermelon (Cubed)
- 2 Sprigs Peppermint (finely chopped)
Instructions
- In a small pan toast pumpkin seeds over medium high heat until beginning to turn brown. Set aside to cool.
- While pumpkin seeds are cooling, prep all the other ingredients.
Once cool add in pumpkin seed and other ingredient together and gently toss to combine. - Serve and enjoy
