Say hello to the EASY Bullet Proof Peppermint Mocha.
Confession time! I was a tea drinker until I was 19 and then during the holiday season I discovered the deliciousness of a peppermint mocha. Oh my god guys, that was almost 10 years ago. Since then my affection for coffee has only grown but I still go back to that first love every now and then.
Two years ago I found myself on a paleo diet to help heal my gut after accidentally ingesting gluten. I was craving a latte, or mocha, or something other than the black coffee with coconut milk that I had been having. I’m a firm believer that if you’re craving something you shouldn’t deprive yourself. It will only lead to binge eating and feeling guilty later. So I looked into paleo approved coffee ideas that would calm my craving without compromising my diet and bullet proof coffee came up.
If you haven’t heard of a bullet proof coffee go ahead and take a minute to google it.
Some people drink it daily, with the special oil and coffee. Other’s think it might be unhealthy to have that much butter and oil in their daily coffee. Me? I like having it once or twice a week (with breakfast) Moderation right? I love the texture and latte feel without the milk (or expensive and messy espresso machine). I think it’s a great choice when looking for the occasional coffee treat. You can make it fully dairy free and vegan by not using the grass fed butter, but you will loose some flavor and foam quality- I learned this from experience.
I originally used peppermint extract but have since modified it and use Peppermint Essential oil now.

Rich and flavorful coffee with the mouth feel of a latte without the milk.

- Total Time: 7 minutes

- 1 TBS grass-fed butter (*Omit to make Dairy free and Vegan*)
- 1 TBS Coconut oil
- 1 or 2 Drops Peppermint Essential Oil (* Or substitute with 1 tsp Peppermint extract*)
- 2 tsp Cacao Powder (*Or substitute with Coco powder*)
- 2 TBS Maple Syrup
- 4 cups Freshly Brewed Coffee
- Wake up and brew your coffee!
- Add all the ingredients to a blender and blend for 20-30 seconds.
- Pour into your favorite mug and enjoy.
