A Caramel latte is my go-to coffee choice. I love how caramel pairs with coffee and cream. It adds the right amount of sweetness and body to the latte and when drizzled over whipped cream it's divine.
A Starbucks caramel macchiato or Dutch bro's caramelizer are pretty standard choices for when I'm out getting coffee. BlackRock coffee is the odd ball because I LOVE their Irish Lattes and always forget they have any other flavor.
But when I'm at home and I want something more than just my French pressed coffee with cream and brown sugar, I love making these bullet-proof caramel lattes.
The recipe uses my coconut caramel sauce to sweeten it and add a depth of flavor. The caramel sauce uses maple syrup instead of sugar. It's awesome because it makes the coffee non-dairy and paleo friendly. That way I don't feel as guilty when I have an extra large mug of it.
It invokes the same feelings as when you make homemade cookies. It's comforting and exciting wrapped in sweetness. Which makes it a special treat.

My first bullet-proof coffee was my bullet-proof peppermint mocha. After my obsession with it I started experimenting with different flavors to make bullet-proof coffee. Out of all the flavors Vanilla Caramel was a big winner.
If you're not familiar with bullet-proof coffee let me explain a little. Bullet-proof coffee, aka Butter coffee, is blending c'en buy just the MCT oil instead of using coconut oil. I just like how it tastes and love that I have more options when I'm eating paleo.
What milk for a dutch bros caramelizer recipe?
I'm really not a fan of most non-dairy creamers and milks in my coffee. If I have to choose one it would be cashew milk but I end up feeling like I'm drinking coffee flavored cashew milk instead of a cup of coffee.
The mouth feel is also weird for me when nut milks are used as creamers. Some times they are gritty, other times they have a weird gelatinous feel to them.
Yuck. Its probably why I love the bullet-proof method so much. It creates a dairy free coffee that has a creaminess in both taste and mouth feel. I don't feel deprived or wanting when I make my coffee bullet-proof.

This Caramel latte is perfectly caramely and just sweet enough for me. If you have a sweet tooth and aren't used to minimal sugar you might have to add a little maple syrup to amp it up a bit more to your liking. Try the recipe as is first, then adjust if you really need too.
It feels a little silly having a recipe so short but it is seriously that easy...
