- Worcestershire sauce

How to Make Gluten Free Chicken Broccoli Casserole
Place the trivet inside the Instant Pot insert. Place chicken on the trivet and season with salt and black pepper, Add the cup of water to the pot, close the lid and seal the valve.

Cook on high pressure for 9 minutes then manually release the pressure.
Once the pressure has all been released, remove the chicken from the pot carefully, transfer to a large bowl and shred. Set aside.
Turn the saute function on on the Instant Pot and saute the onion and garlic.

Once onions are cooked and garlic is fragrant, add broth and Worcestershire sauce to the pot and deglaze the bottom of the pot as you add it in.
Next, add in the rice, ranch mix, and add the cooked chicken back in.

Close the lid, seal the valve again and cook on High pressure for 7 minutes. Perform another manual pressure release.
Add in steamed broccoli, cheese, stir and serve.

Storage
For best results, leftover chicken, broccoli and cheddar casserole can be stored in an airtight container in the fridge for up to 3-4 days.
This makes a wonderful freezer meal. If you want to make a second batch of this, you can freeze it for later. Once you've made the whole recipe, let the casserole cool down to room temperature before transferring it to a freezer safe container and freezing for up to 3 months.
Be sure to remove your Instant Pot Chicken Casserole from the freezer to thaw overnight before reheating.

- I used boneless, skinless chicken breasts, but you can use other cuts of chicken, like boneless chicken thighs. You may need to adjust the cooking time if you swap the cut of meat.
- I used frozen broccoli florets that I steamed according to the bag's instructions, but you can use fresh broccoli that you cooked however you prefer.
- You can use white rice or brown rice, whatever you prefer.
- Instead of water, you can use more chicken broth or chicken stock- this is our favorite gluten-free version.
- Want some more cheese? Add some fresh grated parmesan cheese.
- For even more delicious flavor, pour some homemade chicken gravy over your broccoli and cheddar casserole.

Want to shred the chicken but don't know how when it's too hot to touch? No worries, here are a few ways to shred it without burning yourself!
- Use an electric mixer to shred it. I find this is a really easy way to get the shredding done fast for this gluten free dinner recipe. But you can use whatever option works best for you!
- Use two forks - one to hold the meat and one to shred the meat.
- Use "bear claws" or something similar. There's a fancy kitchen "gadget" that's out there to safely shred meat without burning yourself. These can also be used to toss a salad, so there's another use for them. They're usually two wooden claw type pieces, similar to how you would use forks, but usually shredding things faster and easier.
