Are you looking for a fun take on classic pancakes? These gluten free pancake bites are light, fluffy, and delicious! They can be made sweet or savory, and are a fun breakfast to enjoy any day of the week.

How to Make Gluten Free Pancake Bites
I absolutely love these pancake bites because they are so easy to customize and make a fun breakfast out of. Best of all, they come together with simple ingredients.
Here's what you need:
- Gluten Free Flour (We like Bob's Red Mill Gluten Free 1-1 or King Arthur Flour Gluten Free 1-1)
- Sugar
- Vegetable oil
- Egg
- Milk
- Vanilla extract
- Salt
- Your favorite things to add in (chocolate chips, blueberries, cooked sausage crumbles, cooked bacon bits, use your imagination)
- Syrup for dipping
That's it, just simple ingredients you probably already have around the house. The other thing you'll need is a muffin pan.

Personally, I love this silicone muffin pan because it is so easy to get the pancake bites out.
If you're new to making pancakes from scratch, don't worry, this is super simple.
First, all you need to do is combine your dry ingredients - the salt, sugar, baking powder and gluten free flour.
Then add your wet ingredients - the egg, oil, and milk.
Whisk it all together!

If you want to add some mix ins, now is the time. You can split the batter into a couple bowls and add things like chocolate chips and berries. Stir until everything is incorporated.

Finally, just add it to your mini muffin pan. I really like silicone because it is super easy to get them out after they are done. Then just bake for 10-12 minutes and enjoy!

Can I make these gluten free pancake bites dairy free?
You bet. Just substitute your favorite dairy free milk for the milk in this recipe. Pancakes are some of the most forgiving things you can possibly make, so don't stress out so much about how they are going to come out.
Can I make these gluten free pancake bites vegan?
If you want to make these pancake bites vegan (dairy and egg free), just swap the milk for your favorite alternative. You can use a commercial egg replacer, or ¼ cup applesauce to replace the egg with.

How to Freeze Gluten Free Pancake Bites
I love to make a few batches of these and freeze them for an easy breakfast. After they have completely cooled, put them on a parchment line baking sheet, and freeze them on the sheet for 10 minutes.
This makes sure they won't stick. Then, you can put them in a freezer bag, and separate them with layers of parchment paper. Just pop them in the microwave when you're ready to eat them!
