Ingredients

Units Scale
  • 1 cup Gluten free Bread Crumbs
  • 1/2 cup Parmesan Cheese
  • 1/2 tsp Pepper
  • 1/2 tsp Salt
  • 2 lbs Ground Turkey
  • 2 Eggs
  • 1 tsp Dijon Mustard
  • 2 tsp onion oil (can sub with olive or avocado oil)

Instructions

  1. Preheat the oven to 350F and grease a baking sheet
  2. In a food processor puree the  bread crumbs, Parmesan cheese, salt and pepper until the bread crumbs are fine.
  3. In a large bowl  place the ingredients and mix thoroughly (it's best to use your hands, but you can mix with a spatula).
  4. Using your hands grab a golf ball size piece of the meat mixture and roll into a ball and place on the baking sheet. Repeat this until the baking sheet is full and the meat mixture is gone.
  5. Bake for 20 minutes and allow to cool before using.

Notes

If you're having a hard time finding gluten free croutons or bread crumbs it's super easy to make them. Take your favorite gluten free bread. Cut it into cubes and leave out overnight. The next day toss with a TBS or so of oil and a large pinch of salt and bake at 250F for 40 minutes, until they are crunchy and golden. Let them cool before storing. These make wonderful additions to salads and soups, or crumble up for bread crumbs (recipe coming soon)
